Method
1. In a bowl mix together the flour, cinnamon and baking powder. Then, in another bowl add the sugar to the butter and whisk together until you have a smooth mixture.
2. Start to add the flour/cimmamon/baking powder combo to the butter/sugar paste a tablespoon at a time. For every tablespoon of mixture also add an egg. When you’ve no more eggs, add the rest of the dry mixture and fold together well, until well mixed up.
3. You now want to make the mixture a bit bananay. Do this by taking 2 of your 3 bananas and mashing them in a bowl. It may be easier to use a blender or electric mixer. Once you have a smooth paste add to the rest of the mixture and fold in well, ensuring you end up with a consistent, smooth mixture.
4. Get yourself a cake tin around 20cm in diameter and use a little butter to grease the bottom and sides. Pour in all the cake mixture and place in the oven. This will need to bake for around 45 min. After 45 minutes push a knife into the centre of the cake – if it comes out clean you know it is ready.
5. When you’re happy the cake is fully baked take it out the oven and stand for a few minutes to cool down. Then take it out of the tin and let it fully cool (a wire cake stand is ideal).
6. To make the filling whip the cream until it stiffens. Cut the remaining banana into tiny chunks and add to the cream. Do the same with the marshmallow and add – giving you a banana and marshmallow cream.
7. Using a bread knife slice the cake horizontally into three equal layers. On top of the first layer spoon on the caramel followed by the cream mixture made in step 6. Add another slice of cake and repeat. Use the remaining caramel and cream on top of the cake, and if you wish, use some marshmallows to decorate the top of the cake. Done!

2. While the chicken is frying peel and dice the onions. Cut the butternut squash in half – remove the skin and deseed with a spoon. Then cut the squash into cubes roughly an inch in length along each side.
3. Check the chicken is cooked thoroughly right the way through. Once you are happy remove them from the casserole dish and add the onion. Drizzle a little more oil on if required and crush in the garlic. Stir with a spoon coating the onion well in olive oil.
4. Once the onion begins to sizzle add in the butternut squash. Wash the mushrooms and chop them up and add these in. Stir in well. Also add the rest of the veg – the mange tout, french beans, coriander and thyme. Add a little more salt and pepper to taste.
5. After a few minutes add the chicken stock and bring to the boil. Once boiled add the chicken to the casserole dish and put the lid on. Put in the oven and leave to cook for around 45 minutes. Serve immediately with a glass of red wine and thick bread rolls.
